Along with balancing a full-time job and makeup artistry, one of my other “side gigs” is baking Macarons. Now don’t confuse this with Macaroons.

A macaron specifically refers to a meringue-based cookie made with almond flour, egg whites, and granulated and powdered sugar, then filled with buttercream or fruit spread. The delicate treat has a crunchy exterior and a weightless interior with a soft ending that’s almost nougatlike in its chewiness. To add to the confusion, it’s often called a French macaroon.

In contrast, the word macaroon is a generic phrase that is applied to a number of small, sweet confections. Mostly, the term is equated with the moist and dense coconut macaroon, which is composed of egg whites, sugar, and dried coconut, often piped with a star-shaped tip, and sometimes dipped in chocolate.

I rarely take orders during bridal season as I learned my lesson last year.

What happened last year you ask?

Well, one of my high school friends contacted me to ask if I would make 180 mini-macarons for her wedding.  I quickly agreed because it’s my high school friend after all.  Here’s the kicker…the order would be due in the morning before two bridal trials.  Just the day before, I finished a wedding.  So while baking, I had to clean my brushes.  Needless to say, I didn’t sleep at all that weekend.  Lessons Learned.

So what kind of mini-macarons did I make?  For Jon + Yanto’s wedding, I did an eggplant-coloured shell with white chocolate lemon ganache.

To my surprise, an e-mail came my way from another high school friend & the one that got me into makeup artistry, Mr. Chris Luk.  He was the photographer for Jon + Yanto’s wedding and snapped some photos of my creation.  It was really sweet of him and great to see how everything was laid out.
